Nocino, walnut liqueur, has been made from immature white walnuts in northern Italy for centuries. Known for its bittersweet character, nocino makes for an excellent digestif and is very versatile in cocktails. In this hands-on class, we’re making a hyper-local version of this nutty liqueur by using our native black walnuts. We’ll head out to pluck immature walnuts, provide you with a lidded jar, then walk you through the steps to create your own nocino.

Matt Groves from Karrikin Spirits Company will provide tips for using nocino in cocktails and prepare some cocktail samples from pre-prepared nocino.

You’ll receive instructions on next steps (walnuts need to steep in vodka for several months before being strained out. Add your own water and sugar before the bottle is left to rest until Christmas holiday time). When it’s all said and done, you’ll have about a pint of nocino.

What does nocino taste like: According to chef Alan Bergo, nocino tastes a bit like black jelly beans, and a little bit like Jaegermeister, but milder.

What to expect: We will be hiking, possibly off trail, for about ½ mile before returning to the barn. Dress with sturdy, close-toed shoes. Long pants recommended.

In the event that Cincinnati Nature Center cancels a program, full refunds will be issued.

Covid-19 Policies: Cincinnati Nature Center will run advertised programs using consideration of recommendations made by the CDC and local health agencies. Current Covid-19 protocols can be found online on our website. Cincinnati Nature Center may update the status or format of programs and events based on Covid-19 conditions at the time of the program.

Media Release: All participants (18 and older) associated with this transaction grant permission to Cincinnati Nature Center to utilize images, likenesses, actions, or statements in any form taken during a visit to the Nature Center or virtual presentation for the purpose of promoting the Nature Center in perpetuity.
